There’s chicken, and then there’s this chicken. We’re talking fall-off-the-bone juicy inside, crispy skin that shatters when you bite it, and that rich beer-infused flavor that makes you forget every dry bird you’ve ever had. The secret? Let the beer do the heavy lifting first, steaming the meat to tender perfection, then crank up the heat and hit it with oil and seasoning so the skin crisps up like it came straight out of a restaurant kitchen. Your family will be drooling at the smell, and you’ll look like a genius — all while secretly laughing at anyone who still eats boneless, skinless chicken.
Ingredients
- 1 whole chicken (about 4–5 lb), cut into pieces
- 12 oz beer (lager or light ale)
- Oil spray (or 1–2 tbsp neutral oil)
- 2–3 tbsp Seafood & Chicken Seasoning or Special Chicken BBQ Seasoning
- Optional: kosher salt & black pepper
Preparation Instructions
- Prep the pan: Preheat oven to 400°F. Line a roasting pan with foil and set a rack/drip tray inside. Pour the beer into the bottom of the pan (liquid should not touch the chicken). Arrange chicken pieces skin-side up on the rack. Do not season yet.
- Steam-bake: Cover tightly with foil and bake 1 hour at 400°F; the beer steams the chicken and keeps it juicy.
- Season & oil: Remove from the oven and increase heat to 435°F. Uncover, mist chicken all over with oil spray, and season generously with your favorite blend (Seafood & Chicken or Special Chicken BBQ). The oil binds the seasoning and helps crisp the skin.
- Crisp: Return to the oven uncovered for 30 minutes at 435°F until deeply golden and the thickest part reaches 165°F.
- Rest & serve: Let rest 5–10 minutes on the rack to minimize drips, then plate with your favorite sides.
